- Tagliate a cubetti il petto di pollo e mettetelo a marinare per qualche minuto con la cipolla di tropea, un pizzico di sale, il succo di mezzo limone e acqua.
- In un tegame antiaderente fate saltare con 1 cucchiaio di olio evo i cubetti di petto di pollo.
- Aggiungete le cipolle, fatele dorare e poi mettete il succo d’arancia.
- Tagliate a dadini l’ananas e aggiungetelo al pollo insieme allo zucchero.
- Lasciate per qualche minuto in cottura così che evaporino odori e profumi e si ottenga una consistenza corposa.
- Sfumate con un cucchiaino di aceto di mele. Lasciate evaporare e condite con olive nere, mentuccia e scorza di arancia grattata finemente. Servite su frisella di pane inumidita, condita con emulsione di olio, sale e menta.

Ingredients: 250 grams of chicken breast, 160 gr DOLE pineapple pulp, from which we will draw DOLE 1 orange juice and zest, 1/2 DOLE lemon, 1 red onion, black olives Greek type, 1 teaspoon of brown sugar, salt taste, fresh mint, frisella of hard bread, extra virgin olive oil;
Method: Diced chicken breast and put it to marinate for a few minutes with the red onion, a pinch of salt, the lemon juice and water. In a nonstick saute pan with extra virgin olive oil 1 tablespoon of chicken breast cubes. Add onions, brown them and then put the orange juice. Diced pineapple and add to the chicken with the sugar. Leave for a few minutes so that evaporate during cooking smells and perfumes and you get a full-bodied texture. Pour a teaspoon of apple cider vinegar. Let evaporate and season with black olives, mint and orange zest finely grated. Served on frisella moistened bread, topped with emulsion of oil, salt and mint.
